Enfrijoladas

This is a super easy dinner or breakfast to make. It is mostly served as breakfast with fried eggs, but we love frijoles (black beans) so much that we also have these for dinner.

Ingredients:

* Queso fresco
* Green salsa or pico de gallo
* Black bean soup
* Tortillas
* Olive oil
* sour cream (optional) I use Greek yogurt instead of sour cream

Make your black beans as you like them. Keep the beans warm as you'll need them for the enfrijoladas. Heat up a small amount of oil in a sauce pan and lightly fry a tortilla before dropping this same tortilla in the black beans. Let the tortilla soak in some of the black bean soup and pull it out and place on a plate. Repeat as many times as you need to. Add some beans on top of the tortillas, add your green salsa or pico de gallo, then add your cheese and sour cream. If you have chosen to do this for breakfast you can add a fried egg on top of your enfrijoladas.
